Sometimes you just want something simple. And pretty. And I love roasting vegetables. Toss with olive oil, salt and pepper and maybe some garlic and stick it all in the oven. Voila! You have dinner. (Okay – not really dinner in this case but a very fine side dish!)
This doesn’t exactly qualify as a recipe. I have just never roasted asparagus before and I wanted to share it with you. I loved the way it turned out. I probably won’t be doing this when it actually gets hot out (yup we’re still waiting on that people….) but in the mean time this is my new method of choice for cooking asparagus. Yum.
My mom used to make these for us all the time when we were kids. I still have the recipe that I copied from one of her ancient cookbooks somewhere around here. So when I saw this one from The 10 Cent Designer a few weeks ago it got me mildly obsessing thinking about all that delicious chocolate coconut-y goodness. I finally got around to making them this week. I think the version my mom used to make had more coconut (or just different coconut? I used organic because that is what was in the cupboard). But no matter. These just can’t help but be pretty darned amazing. I stuck most of them in the freezer in an effort to hide them from myself because they that tempting. Between this and last week’s Chocolate Crunch Cake, I think it’s safe to say that I won’t be making any more desserts for a long looooong time.
And once again – no baking required! It seems that I have been really into bake-free desserts lately.
