Cooking has fallen to the bottom of my to-do list sadly, but I did manage to get it together in order to make this yummy dip this week (pictured here with toasted pita, roasted potatoes and green beans). It was fate. I just happened to have some Greek yogurt kicking around, along with a cucumber and some dill. Already I was half way there.
I kind of riffed off of this recipe at Kalyn’s Kitchen but, as per usual, I ended up doing things my own way.
Homemade Tzatziki – The Lazy Way
1 500 ml container Greek yogurt
1 cucumber, chopped
1 good handfull of dill, chopped
2 cloves garlic
Put everything in a big bowl and mix well. I let it sit for a few hours to really let the flavours combine, but there really isn’t any reason you can’t dive in right away.
I also didn’t drain the yogurt or use a blender to blend up the whole thing. I did, however, de-seed the cucumber first before finely chopping it, which in my opinion is essential to keeping the whole thing from becoming a runny mess. I also used my Microplane zester to grate the garlic, which basically guarantees that you won’t end up with any random huge pieces of raw garlic. I used about half a lemon’s worth of juice, and I thought it turned out perfectly. Certainly it was miles better than any store bought varieties! There is just something about the taste of dill that seems like summer to me. Of course, this dip works fantastically with pita bread but I also love it on garlic roasted potatoes. Yum!
