Coconut Chocolate Blondies

As far as sweets go, I tend to rely a little too much on a few certain items – chocolate chip cookies and brownies are on high rotation. I don’t usually give much thought to blondies. But I’ve come across a few recipes lately, enough to get me thinking about them. So when I felt like baking this week they were at the top of my list. I used this recipe by the Brown Eyed Baker and it was awesome. The coconut and chocolate really give these guys an edge. The coconut in particular makes them seem almost tropical. It’s perfectly summer-y twist on a classic. And, I know most of the continent is baking in a heat wave, but for my fellow North West Coasters who are still waiting (*sigh*) for the sun, give these babies a go. You’ll be happy you did.
