So it appears I am not yet over my obsession with roasting things. And what’s wrong with that? It’s hard to get excited about salad when it’s so cold outside. Roasting vegetables is both quick and easy – and best of all, healthy! I regularly roast things like yams and broccoli (oh yes!). But for some reason I’ve never done carrots this way – maybe in a big mix of veggies, but never on their own. So this post at Elana’s Pantry inspired me to give it a go. And what do you know? They were great! These actually have a really great firm texture – the kind of texture I always want my yams to have (which they rarely seem to do). So if you are new to the roasted vegetable game give it this one a try first. It’s delicious and healthy and hard to mess up. I’ll try this next time with a little cumin in the mix. Enjoy!
